Pastel de plátano (banana cake)

Pastel de plátano (banana cake) a variation of apple cake

In early lockdown, banana bread had a moment, but you probably haven't tried this version of Pastel de plátano (banana cake) brought to us from the Municipal Market in La Laguna. This recipe is a variant of apple cake, that uses sliced apple, using ripe bananas.

Ingredients:

  • 3/4 cup sunflower oil
  • 2 cups of flour
  • 2 cups of sugar
  • 4 eggs
  • 100 grams of chopped walnuts
  • 4 ripe bananas mashed
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch of salt

Method

Preheat the oven to 200º. Grease and flour a baking tin. Mash the bananas with a fork and mix all the ingredients with a wooden spoon, including the oil, except the nuts. Finally, the chopped walnuts are incorporated with a little flour so that they do not sink into the mixture. Place in the oven and bake for approximately 45-50 minutes, until browned.
