Arroz con leche (Rice Pudding)

Leaving La Laguna by San Benito, just in front of the chapel that gives shelter to the patron saint and protector of the fields of Tenerife, is the Bar "Las Moneditas". In this famous bar its founder, Don Agustín, kept closely guarded a recipe for the dessert of the house, which is an easy to make dish for almost everyone.

Ingredients:

100 gr of rice
1 lemon rind
50 gr of sugar
water
1/2 liter of milk
a stick of cinnamon
a pinch of salt
ground cinnamon
honey

Method:

Pour the rice into ample boiling water, cook for 10 minutes and meanwhile heat the milk with the sugar, lemon rind, cinnamon stick and salt.

After ten minutes, remove the rice and cool it by rinsing it with water in a colander. Put it back on the heat to cook with the milk 10 or 12 minutes until the grains are soft and loose. Remove the cinnamon stick and the lemon peel. Decorate with ground cinnamon and honey to taste.
