| Gofio with honey and almonds |
Among recipes typical for the Canary Islands at Christmas, I found a recipe for Pella de gofio dulce (Sweet gofio roll), which reminded me of the Italian and Portuguese dessert Chocolate salami. (You could add chocolate, I guess.)
Pella, pella de gofio or bola de gofio, is a typical recipe of the gastronomy of the Canary Islands, which has always been part of the cuisine of the native population thanks to the high calorific value. Canarian kneaded gofio pella can be prepared savory or sweet. The savory variety is prepared by kneading the gofio with water or broth, olive oil, salt and served as bread or as an accompaniment to other dishes, such as the Canarian sancocho. This gofio pella made with honey and almonds is super easy, simply kneading all the ingredients together.
Ingredients:
6 tablespoons of honey (or agave syrup to make it vegan)
100 grams of peeled almonds
1 tablespoon lemon zest
2 teaspoons cinnamon
100 grams of Raisins
1 cup of water (240 millilitres)
Method:
Soak the raisins for 10-15 minutes. Meanwhile, crush the almonds. Next, separate the raisins into two and crush half with the almonds.
Place the gofio, the crushed almonds with raisins, the other half of the raisins, the cinnamon, the lemon zest and the agave or honey syrup in a bowl. Mix everything well so that the ingredients are incorporated.
Little by little add water to the bowl, kneading the gofio ball with your hands until you obtain a dense and solid dough. Then form a rounded elongated roll.
Finally, cut into slices and serve.
